I have tried out a Mac Mini running Lion Server and am impressed, it will likely be our replacement for the Xserve -it is now 6 years old. We had lost connection issues with AFP on the older versions of Mac OSX -although Lion seems to have solved that- we have stayed with SMB for all Mac connections to Windows servers -Windows shares were setup to be Mac compatible shares. Note that we have over 20 staff members using various iMacs, MacBook Pros and MacBooks running three different versions of Mac OSX and they use SMB. It took a bit of getting use to but it has worked comfortably and perfectly and I easily switch back-and-forth between the two -Mac OSX Lion and Windows 7. I have that setup and use it to access 4 Windows 2003 servers, 1 Windows 2008 server, and 1 Mac Xserve. One other possibility might be to use a Mac running Windows 7 using Parallels.
